We have activated new plugin but its still using default wordpress search,

In theory, you have to follow WPSOLR screens in sequence: https://www.wpsolr.com/guide/configuration-step-by-step-schematic/

In screen 2.1, did you select the search archive check box, so WPSOLR can replace the default search queries?

You can check for errors in WP debug logs: when some problems occur, WPSOLR reverts to the standard WP search, and log errors.

Search results are showing now, but its only showing title and description, is there any way to show author and publish date

If you selected your theme’s search template in screen 2.1, it is now up to your theme to show whatever it can within the query loop. WPSOLR only takes care of the query.

We are going live and we our your will get change prod.domain.com to http://www.domain.com, please let us know if we can deactivate license from our end and activate it again.

Indeed, you can deactivate the license from your prod.domain.com plugin admin, and activate it on your domain.com plugin: https://www.wpsolr.com/knowledgebase/bought-licence-domain-name-can-change-another-domain-name/
